Christmas goose with apples

The old way to cook a goose with apples. Dried prunes are also added to the filling. You can cook without it, but tastier together. We select a small goose so that the process does not drag out much. Ingredients

  • 5 apples;
  • 200 g of prunes (optional);
  • 1 tbsp. l thyme;
  • 1 tsp ground black pepper;

Cooking method

  1. Mix dry spices, add salt and vegetable oil. It should be a thick gruel.
  2. Cut off the neck of the goose, rinse and dry the carcass, then grate with the prepared mixture. Put the bird in a bag, tie it and leave it overnight in a cool place. You can pickle a large container or other utensils, but with a lid. Spices should not dry.
  3. Cut apples and prunes. We fill the pickled goose, the abdomen can be stabbed with a toothpick. We wrap the wings and legs with pieces of foil so that they do not burn.
  4. We shift the carcass to the ducklings, cover, send to the oven for two hours. Cook the goose at 180 degrees.
  5. Open, pour fat, which will certainly be flooded, fry until golden brown without a lid.

Since there is a lot of fat in a goose, you do not need to grease it with butter or try to shove it under the skin. Unlike chicken, this bird has enough of its own fat, it is located evenly over the carcass.

Stuffed christmas goose

Goose is often stuffed with cereals, usually rice or buckwheat. You can choose to your taste, but it is important to properly prepare the cereal. Here is a variant of rice with prunes.

Ingredients

  • 1 goose;
  • 150 g of rice;
  • 70 g of prunes;
  • 2 tablespoons mayonnaise;
  • salt pepper;
  • 4 cloves of garlic;
  • 2 pinches of ginger;
  • 1 onion;
  • some oil.

Cooking method

  1. Grate or just chop the garlic, add to the mayonnaise, add a little ginger for the flavor, pepper, salt. Grate the goose from all sides, cover, leave for two hours.
  2. Wash the rice, fill it with boiling water, boil for five minutes in a colander. Cut onions, lightly fry, mix with rice, add prunes. Season the filling with spices to your liking.
  3. Fill the goose with rice, sew up the abdomen. Transfer to a baking bag, tie.
  4. We make a puncture in the bag, send the bird for two hours in the oven. Cook at 180 degrees.
  5. Then open the bag, unfold, pour the bird with fat that accumulates at the bottom, brown at 200 degrees.

With buckwheat, the goose is cooked in the same way, the cereal is slightly boiled, mixed with other ingredients, and then the carcass is filled.

Russian Christmas goose with potatoes

The way to cook a goose with the most popular vegetable. The potato is soaked in flowing fat, it turns out to be very tender and tasty, in addition, there is no need to prepare an additional side dish. It saves time and effort.

Ingredients

  • 1 kg of potatoes;
  • 1 goose;
  • 50 g mayonnaise;
  • salt and pepper;
  • 1 apple
  • 2 cloves of garlic.

Cooking method

  1. Mix garlic with mayonnaise. You can use sour cream or prepared garlic sauce for the base. Add salt and pepper. We rub the goose, leave for two hours, you can pickle all night.
  2. We wash the apple, cut it into four parts, put it in the goose. Submit to the form. Cover with a piece of foil and cook for about an hour at 180 degrees.
  3. Peel the potatoes. It’s good if they are the same size.
  4. We take out the goose and carefully pour all the fat into a bowl. Throw around the potatoes. Water it with fat, cover the bird again. Cooking another hour.
  5. We take out the goose, remove the foil. Turn the potato to the other side, pour the bird over melted fat.
  6. We put the goose with potatoes in the oven for about twenty minutes, let it fry. Now the temperature can be increased by 20-30 degrees.

Potatoes can be sprinkled and seasoned with any spices, but in the fat draining from the goose there are also a lot of them, it is important not to overdo it.

Christmas goose on a pillow

The recipe for a very juicy and tender goose in the sleeve. Optionally, you can stick apples or quinces, any other fruits inside. Pillows need vegetables. After cooking, they can be used as a side dish or discarded.

Ingredients

  • 1 goose of medium size;
  • 1 tbsp. l salts;
  • 1 tsp ground pepper;
  • 3 tablespoons of olive oil;
  • 4 cloves of garlic;
  • 2 tablespoons of cognac;
  • 1 spoon of honey;
  • 4 onions;
  • 2 carrots.

Cooking method

  1. Wipe the washed and prepared goose dry inside and out so that the spices penetrate better.
  2. Mix salt with pepper and olive oil, add garlic and grind well. Lubricate the bird, massage, work out the whole carcass well.
  3. Cover with cling film, leave the goose to marinate for four hours. Periodically we walk through the carcass with our hands again, so that the bird is better saturated. We make a kind of massage.
  4. Cut the peeled onions into large rings about a centimeter. We cut carrots with the same circles, salt the vegetables and put them on the bottom of the sleeve.
  5. Place a goose on top of a vegetable pillow. Tie a bag, make a puncture from above. Put in the oven for 1.5 hours. The temperature is 170 degrees.
  6. Melt honey, combine with cognac. We take the goose out of the oven, cut it and turn the sleeve to the sides. Grease the bird with the prepared mixture.
  7. We put the bird in the oven, add the temperature to 200 degrees. Cook until golden brown.

If the goose is not young or large, then the baking time in the bag can be increased to two hours, but you do not need to fry in honey for a long time, the bird should not dry out.

Goose in orange marinade

Another way to cook a delicious holiday goose. For marinade and an unusual aroma, you will need oranges. Choose large and juicy citruses.

Ingredients

  • 1 goose;
  • 3 oranges;
  • salt and pepper;
  • 2 tablespoons of honey;
  • 1 sprig of basil;
  • 3 cloves;
  • 50 ml of soy sauce.

Cooking method

  1. Squeeze juice out of two oranges. Add soy sauce to it, pepper to taste, add honey, salt, water the washed bird. We leave to marinate, periodically turn over to the other side so that the meat is well soaked.
  2. We wash the remaining orange, stick a clove in it, make a few punctures with a knife. We lay the goose inside, there we send a sprig of basil, you can throw a pinch of dry grass.
  3. We shift the goose into the form, pour half the marinade. Cover with foil or send it all in a package for baking. Cook for 2 hours at 170 degrees.
  4. We remove the coating, pour over the goose with the remaining marinade. Fry at 220 degrees to a brownish crust.

If the orange juice is sweet, then you can make a marinade without honey or replace it with regular sugar.
